Job Detail
Prep Cook - Aquarium Concessions
Food & Beverage Attractions
This position is responsible for preparing all food items for the Aquarium Food Court adhering to all Moody Gardens Regulations as well as Local Food Regulations.
The incumbent is authorized to take reasonable action necessary to carry out assigned duties and responsibilities, provided such action is consistent with position guidelines as outlined below.
Position guidelines include, but are not limited to, established company and department policies and procedures and all supervisory directives.  The incumbent is expected to exercise sound, reasonable judgment and initiative, and give high priority to accuracy and details in the performance of job responsibilities. 
•Must maintain a Guest focus while performing duties
•Assumes 100% responsibility for quality of guest experience
•Follows Chefs assignments for opening and closing procedures and food preparation
•Maintain proper inventory levels of all foods in holding bins and monitor waste at all times
•Operation and set up of equipment
•Prepare food items by complying with portions size, quality standards, departmental rules, policies and procedures
•Keep all foods refrigerated when not being used
•Ensure that proper food temperatures are maintained
•Responsible for safety standards, neatness, and sanitation of work areas
•Help remove all trash from concession areas
•Cooking all foods to proper temperature and ensuring consistency of product
•Adhere to company cost control guidelines by not over or under portioning
•Fill orders as they are received and prepare as requested 
•Keep work area clean and sufficiently stocked
•Clean and sanitize all work areas and food preparation equipment
•Adhere to company guidelines for appearance and uniform standards
•Any and all other duties as assigned; duties are subject to change as management deems necessary to best serve the needs of Moody Gardens
•Prior Culinary experience preferred
•Must obtain TABC & Food Handlers Certification prior to beginning work
•Must be reliable and responsible
•Ability to exhibit maturity in the workplace and have a cooperative attitude
•Ability to perform tasks that include reaching, bending, and stooping
•Ability to work in a standing position for long periods of time
•Ability to safely lift bags, cases, and stacks up to 60 pounds many times per day
