JOB SUMMARY:
The Garde Manger is in charge of artistically creating appropriately themed fruit carvings as instructed by the BEO and Executive Chef.
POSITION AUTHORITY:
The incumbent is authorized to take reasonable action necessary to carry out assigned duties and responsibilities, provided such action is consistent with position guidelines as outlined below.
POSITION GUIDELINES:
Position guidelines include but are not limited to, established company and department policies and procedures and all supervisory directives.  The incumbent is expected to exercise sound, reasonable judgment and initiative, and give high priority to accuracy and details in the performance of job responsibilities. 
ESSENTIAL FUNCTIONS:
•Create themed fruit carvings, canapes, cold hors d’oeuvres, and composed salads
•Order proper supplies and fruit to ensure esthetically pleasing designs
•Check the BEO to ensure accuracy
•Assist in putting away buffet food after functions
•Any all other duties as assigned; duties are subject to change as management deems necessary to best serve the needs of Moody Gardens
EDUCATION/ EXPERIENCE REQUIREMENTS:
•Formal education in Culinary School or 5 years of experience in a similar position required
•Must obtain TABC & Food Handlers Certification before beginning work
REQUIRED SKILLS:
•Must be reliable and responsible
•Must be very creative and artistic
PHYSICAL REQUIREMENTS:
•Sufficient manual dexterity of in hands and fingers to use all kitchen equipment
•Ability to stand for long periods of time
