Caymus Vineyards Wine Pairing Dinner Comes to Moody Gardens

Four-course dinner features iconic Napa Valley wines paired with Shearn’s cuisine

GALVESTON, Texas (September 28, 2026) - Moody Gardens invites wine and food enthusiasts to an evening of fine dining and Napa Valley wines during the Caymus Vineyards Wine Pairing Dinner on Wednesday, Nov. 11, at 6:30 p.m. at Shearn’s Seafood & Prime Steaks.

The four-course dinner pairs each course with a Caymus Vineyards wine, showcasing the winery’s renowned Napa Valley Cabernet Sauvignon alongside selections designed to complement each dish.

The evening begins with seared diver scallops served with sweet corn purée, crispy pork belly, heirloom tomato, basil oil and Champagne gastrique, paired with Conundrum 2024 White Blend. The second course features heirloom beet and burrata with roasted golden and red beets, stracciatella burrata, baby arugula, blood orange, candied pistachios, Prosciutto di Parma, aged balsamic and citrus vinaigrette, paired with Bonanza Chardonnay.

For the main course, guests will enjoy a prime center-cut filet mignon with truffle potato pave, charred asparagus, purple cauliflower, roasted cipollini onion, wild mushrooms and Cabernet-Madeira jus, paired with Caymus 2023 Napa Valley Cabernet Sauvignon.

Dessert features a bourbon vanilla crème brûlée with dark chocolate espresso crumble, salted caramel, fresh blackberries and chocolate tuile, paired with Nurseryman Napa Cabernet.

Located in the heart of Napa Valley, Caymus Vineyards is best known for its Cabernet Sauvignon, with grapes sourced from vineyards throughout the valley. The winery's signature style emphasizes ripe, concentrated fruit and a rich, approachable character, while its portfolio also includes other California wines.

The dinner will be held at Shearn’s Seafood & Prime Steaks, Moody Gardens’ signature fine dining restaurant, offering an elevated setting with sweeping views of Galveston.
